At the back of the hostel where we had our workshop in Roxas was a local dried fish factory. When the wind blew from the sea, the smell of dried fish permeated the air and threathened to linger longer clinging to one's clothes. Well, some good things like delicious dried fish do come with some challenges. LOL. Salting and drying preserve the fishes for months. With the local factory just by the shore, there is always an assurance of produce's freshness. Being dependent purely on the sun for drying, this industry is seasonal peaking on summer months and lean during rainy season.
